All you need to make these tasty chicharitas are green plantains, oil, and salt!

If you’re familiar with Puerto Rican cuisine, you know how important plantains are to us. We use them in a variety of ways, both sweet and savory, brown, yellow and green.

In this recipe, the thinly sliced green plantains are deep fried in oil, providing an incredibly light and crunchy texture and neutral, salty flavor that’s quite versatile.

Tips for The Best Results

Make sure not to skip these essential steps when making these deep fried plantain chips:

  • A vegetable peeler will help to achieve the thinnest, crispiest chips possible. Be patient during this step and slowly pull the peeler lengthwise down the plantain, to get long strips. 
  • Make sure to use a cooking thermometer to keep your oil at or close to 350°F the entire time. This will prevent your chips from burning or from soaking up too much oil.
  • Always transfer to a paper towel lined plate! This step is super important in draining any of the excess oil, resulting in perfectly crisp, crunchy manriquitas!

Description

These 3 ingredient crunchy deep fried plantain chips are totally addicting. Often called mariquitas, platanitos, or chicharitas, this tasty snack is a staple in the Caribbean and across Latin America. They’re perfect for serving with homemade mayoketchup or mojo sauce.


Ingredients

  • 3 green plantains
  • 2 cups oil (can be canola, vegetable, etc.)
  • salt to taste

Instructions

  1. Peel the plantains. Trim off both ends of the plantains and carefully puncture the knife into the skin, making a shallow cut lengthwise. Wedge your nails or the knife under the skin and peel it back until the fruit is completely peeled.
  2. Slice the plantains. Slice the plantains lengthwise into long strips using a vegetable peeler or mandolin. Be very careful not to cut yourself.
  3. Fry. Heat the oil t0 350°F in a pot large enough for the strips to not crowd. Fry the plantains until crisp and light golden brown all around. You may need to do this in batches to prevent crowding the pan.
  4. Drain & salt. Transfer to a paper towel lined plate to drain any excess oil and immediately sprinkle with salt to taste. Enjoy with mayoketchup or mojo sauce!
