Our Mission
Here at Salima’s Kitchen, the mission is to share the colorful flavors of Moroccan and Puerto Rican cuisine, and the food I grew up eating with family.
Because Moroccan recipes & Puerto Rican recipes are new to many home cooks and sometimes require intimidating ingredients, I like to share tips and tricks to make the cuisine approachable to everyone. Many of the most popular recipes on the blog are spice forward and come together with minimal ingredients or within a reasonable window of time (I’m talking 15 to 30 minutes.)
Whether it’s providing easy substitutes for staple ingredients or shortcuts for a longer recipe, the hope is that you try something new and feel empowered to incorporate more flavor into your daily life.
Recipe Development & Testing
Many of the recipes shared here are family recipes that have been tested and perfected for decades. That said, there are also a handful of newer recipes, developed and tested by Salima. Rest assured that all recipes (passed down or new) have been carefully tested several times before being published.
It’s one of the biggest perks of the job getting to tweak and test these dishes, even when they don’t work out the first (or second, or third) time. This process gives us confidence that you’ll have success when trying it out. Plus, it provides us with lots of valuable information like tips and tricks to make things go smoothly. Keep an eye out for these tips in the blog posts and recipe cards!
There are plenty of recipes that we’ve tested and ended up not loving, that never made it to the blog. When a new recipe is shared, you can trust that it’s gone through several rounds of testing and made the cut for good reason.
Comment Policy
Comments are an important part of the community here at Salima’s Kitchen. All readers are welcome and encouraged to share their honest feedback about recipes, both good and bad.
That said, all comments are subject to moderation, review, and removal. This means that we reserve the right to remove (or not publish) any hateful, disrespectful, offensive, off-topic, or spam comments, when necessary.
Star Ratings
Star ratings are equally important to the integrity of recipes on this blog. Ratings are given on a 1-5 scale, with 1 being the lowest and 5 being the highest. All ratings must include a comment, along with a name and email address.
We never manipulate star ratings.
