Salads

Many of the salads in this collection are heavily influenced by Moroccan & Mediterranean cuisine, making them versatile in colors, textures, and flavors. You will notice that many of these recipes don’t include leafy greens, and instead focus on vegetables that are roasted, stewed, or grilled, and occasionally served warm.

Start with small plates of this lentil salad, tomato salad, and beet salad, three Moroccan recipes that make wonderful appetizers served with warm bread. You can also serve this warm couscous salad as a side dish with a variety of proteins. And if you want a more traditional salad, you can’t go wrong with this ensalada verde, a leafy green salad with a simple homemade dressing.
