Ingredients
- 1 tbsp olive oil
- 1 tbsp lemon juice or white vinegar
- 1 tsp salt
- 1 tsp pepper
- 4 Roma* tomatoes, cubed and seeded
- 4 Persian cucumbers, cubed
- 1/4 red onion, diced
- 2 tbsp parsley, minced
Instructions
- Make the dressing: In a salad bowl whisk together olive oil, lemon juice, salt, and pepper.
- Chop and toss the veggies: To the bowl add cubed tomatoes, cucumbers, onion and parsley. Toss to coat with the dressing and serve.
Notes
*Feel free to use whatever kind of tomatoes you like. You should have about 2 cups of cubed tomatoes in total.
