Like this Moroccan Tomato Salad and Eggplant Salad, I grew up enjoying this salad with family in Morocco. Salads are a special part of our culture, as they’re usually enjoyed together. At any given meal, it’s common to see 3-4 different salads served surrounding the main course.

Ingredients

Scale
  • 1 tbsp olive oil
  • 1 tbsp lemon juice or white vinegar
  • 1 tsp salt
  • 1 tsp pepper
  • 4 Roma* tomatoes, cubed and seeded
  • 4 Persian cucumbers, cubed
  • 1/4 red onion, diced
  • 2 tbsp parsley, minced

Instructions

  1. Make the dressing: In a salad bowl whisk together olive oil, lemon juice, salt, and pepper.
  2. Chop and toss the veggies: To the bowl add cubed tomatoes, cucumbers, onion and parsley. Toss to coat with the dressing and serve.

Notes

*Feel free to use whatever kind of tomatoes you like. You should have about 2 cups of cubed tomatoes in total.
