If you’re looking for an easy way to make tortillas, without any flour or many special ingredients, this is the recipe for you!
As a lifelong lover of Puerto Rican cuisine, it’s no surprise that I’m finding any way possible to use plantains in my kitchen. What I love about this recipe is the simplicity of ingredients and how versatile the tortillas are.
I’ve been filling them with my favorite grilled chicken skewers, stewed beans, or just toasting with a hefty serving of cheese to make simple quesadillas.
How to Make Plantain Tortillas

To Tortilla Press or Not…

If you can make the space for it, a proper tortilla press is a game changer for this recipe.
A good quality cast iron tortilla press allows you to achieve super thin plantain rounds that mimic traditional tortillas in every way.
If you have one already, you know how awesome this tool can be for making all kinds of tortillas, flattening homemade empanada dough, and more.
If you can’t justify the purchase, flatten your tortillas using your countertop and a heavy bottomed cast iron skillet and parchment paper. Take extra time to press down super hard to achieve the thinnest possible rounds.
The thinner you can get these tortillas – the better. Don’t worry about them ripping, the starch from the plantains binds them incredibly well.

Description
These easy Plantain Tortillas are made with just 3 ingredients: green plantains, oil, and salt. The plantains are boiled until soft, processed into a dough, then pressed and toasted like a traditional tortilla. Perfect for filling with meat, beans, veggies, and cheese!
Ingredients
- 6 green plantains (some yellow is ok)
- 1 tsp salt
- 1 tbsp oil
Instructions
- Chop & boil the plantains: Bring a pot of salted water to a boil. Chop the plantain into 2 inch chunks. Boil the plantain pieces until fork tender, about 20 minutes.
- Cool & process the dough: Let the boiled plantain cool for 20 minutes to prevent your food processor from exploding. Peel before pulsing the plantains with salt and oil until a ball of dough forms. If the dough feels dry, add a teaspoon or two of the water the plantains were boiled in.
- Press the tortillas: Shape the dough into 2 inch balls before flattening between pieces of parchment paper (to prevent sticking) using a tortilla press.*
- Toast the tortillas: Toast the tortillas in a nonstick skillet or flat top, flipping until browned on both sides and slightly puffed up. Enjoy!
Notes
*Use oiled hands to work the dough and prevent sticking.
*If you don’t have a tortilla press you can flatten tortillas using a cast iron skillet and the counter – just take time to apply pressure and flatten the tortillas as thin as possible.
