Not-so-secret ingredients

If you’re a regular on the blog, you’re probably familiar with the not-so-secret ingredient that makes these gluten free white chocolate chip macadamia nut cookies gluten free. This ingredient has been a life saver over the last year of my journey with gluten free eating.

This gluten free flour from Bob’s Red Mill is the perfect substitute for regular flour in anything from baked goods to sauces and breading.

To put it simply, this flour is a life saver.

Another key ingredient that makes these cookies soy free as well? This white chocolate bar. I had to search quite a few different stores to find white chocolate that didn’t contain soy. It’s not as easy as it might seem.

This bar I found at Whole Foods was worth the effort though as it is creamy and just sweet enough without being overpowering.

If you’re not allergic/sensitive to gluten and/or soy, feel free to use any flour and white chocolate chips that you like! These gluten free white chocolate chip macadamia nut cookies are truly delicious and easily adaptable.

Gluten Free White Chocolate Chip Macadamia Nut Cookies

Description

These gluten free white chocolate chip macadamia nut cookies are the perfect combination of chewy, soft, thick and buttery!


Ingredients

Scale

2 1/2 cups gluten-free all purpose flour (I used Bob’s Red Mill)

1 tsp salt + 1 tbsp finishing salt for garnish

1 tsp baking soda

2 sticks of butter (softened to room temperature)

1/2 cup white sugar

1 cup brown sugar

1 tsp vanilla extract

2 eggs

1 1/2 cups white chocolate (soy free), cut into chunks

1 1/2 cup macadamia nuts, chopped


Instructions

  1. Preheat your oven to 375. In a medium sized bowl mix the flour, baking soda and salt.
  2. In a larger bowl add butter, vanilla and both sugars and mix until creamy and light. Add eggs and mix well. Mix in the flour mixture, 1/2 cup at a time. Stir in the white chocolate chunks and macadamia nuts.
  3. Drop tablespoon sized balls of cookie dough onto a parchment lined baking sheet. Sprinkle a pinch of finishing salt on top of each cookie. Bake for 8-10 minutes and enjoy!
