This is my very first post so I wanted to start simple, with this classic avocado toast and use this as an opportunity to introduce myself.
Background on Salima's Kitchen
I am currently a third grade teacher but my passion has always been cooking. I have always dreamt about writing a cookbook and this seemed like a good way to get my culinary adventures out there!
This adventure of taking pictures of my food and sharing them with the world started over on Instagram.
About a year ago, I started an account (then called @PortlandKitchen) posting pictures of whatever I was cooking or eating out. Sometimes I shared meal prep options I took to work and sometimes I shared my favorite local restaurant.
In addition, I enjoyed talking about family recipes and sharing the food my parents cook. They come from different ethnicities where food is a focal point of the culture so it has always been a big part of my identity.

Here's my favorite, super basic, recipe for avocado toast:
Ingredients:
2 eggs
1 medium avocado (ripe)
2 pieces of toast
salt & pepper to taste
Directions:
Cut avocado in half, remove pit and skin. Place avocado slices in a small bowl and mash with a fork. Add a pinch of salt and pepper.
Toast 2 slices of toast.
In a small frying pan fry your eggs (one at a time) to your desired runny-ness and sprinkle with salt and pepper.
Spread avocado mash onto toast and top with egg! Enjoy!
