Lemon Pepper Inspiration

I cannot take full credit for the idea behind these wonderfully flavorful fries. My cousin Rita lives in a neighborhood called Gastown in Vancouver B.C.. The last time I went to visit her she took me to this restaurant she raved about solely for their lemon pepper fries.

So we went, and the fries were… worth the hype. They had this incredible combination of spicy and sour that complimented the crunchy fries so well. So Rita and I were equally obsessed.

The problem?

It’s actually really had to replicate the lemon flavor they created.

It’s definitely not the flavor you would get if you simply squeezed a lemon over fries. It was baked into them. And after years of research… I finally bring to you (and my cousin Rita)… Lemon Pepper Oven Baked Fries.

Reduced Guilt Fries

Okay… let’s be honest. I never feel guilty when I eat fries. How could you feel bad while eating such an amazing creation? That said, there is one thing that I don’t feel 100% awesome about while eating these crunchy potatoes, and that’s the heavy feeling I get whenever I eat something deep fried.

Luckily, these lemon pepper oven baked fries take away any bad feelings, and leave you feeling light and satisfied! They’re baked in the oven, seasoned with 4 simple ingredients (salt, pepper, lemon, and oil), and make the ultimate crunchy on the outside, soft on the inside situation.

They go perfectly with soups, salads, and especially accompanied by a healthy serving of my favorite ketchup

Scale

Ingredients

  • 2 russet potatoes
  • 2 tbsp lemon pepper
  • 1/2 tbsp salt
  • 3 tbsp olive oil or ghee

Instructions

  1. Preheat your oven to 400 degrees. Slice your potatoes into thin, evenly cut strips. Season generously with lemon pepper, salt, and two thirds of the oil.
  2. Arrange fries directly on a sheet pan and bake for 20 minutes. Pull out of the oven and toss with a spatula, making sure each fry flips. (IF THE FRIES ARE NOT MOVING WITHOUT BREAKING, THEY AREN’T READY YET. Throw back in the oven and check again until every 2 minutes they are ready to flip.)
  3. Drizzle with remaining oil and bake for another 10 minutes. Season with additional salt if necessary.
