Preheat your oven to 400 degrees. Slice your potatoes into thin, evenly cut strips. Season generously with lemon pepper, salt, and two thirds of the oil.
Arrange fries directly on a sheet pan and bake for 20 minutes. Pull out of the oven and toss with a spatula, making sure each fry flips. (IF THE FRIES ARE NOT MOVING WITHOUT BREAKING, THEY AREN’T READY YET. Throw back in the oven and check again until every 2 minutes they are ready to flip.)
Drizzle with remaining oil and bake for another 10 minutes. Season with additional salt if necessary.
