These refreshing Strawberry Pina Coladas are made with chunks of frozen pineapple, a can of coconut milk, a squeeze of lime juice and a splash of silver rum. They are the perfect cocktail for hot summer days and come together in a matter of minutes!

This was inspired by my Virgin pina colada recipe, and pairs well with this awesome Puerto Rican sidedish.

Ingredients

My favorite thing about making strawberry pina coladas is how simple the shopping list is. Ingredients like pineapple, strawberries and limes make me feel like I’m enjoying a fruit salad with a side of rum 😊

  • frozen pineapple
  • coconut milk 
  • limes
  • silver rum 
  • frozen strawberries

Instructions

Start with your favorite high power blender.

Toss in the frozen pineapple, coconut milk, lime juice and rum.

Blend things up until the consistency is smooth, creamy and easy to pour. Fill your glasses half way, making sure to use only about half of the contents of your blender.

From there, it’s time to toss in the frozen strawberries and get blending again.

This cute pink mixture then gets poured over the first layer of pina colada delicious-ness in your glasses to create a fun multi-color blended drink.

Garnish with pineapple slices, fresh strawberries or a slice of lime and enjoy!

Hint: using frozen fruit really helps achieve that blended, frozen drink feel. If all you have is fresh fruit, pop it in the freezer before blending!

Variations

Storage

I’ve tested this out a few times and I can confidently tell you that these Strawberry Pina Coladas are best enjoyed fresh. Honestly, most cocktails and blended drinks especially do not stand up to freezing, making ahead or enjoying as leftovers.

Plus, they come together so quickly and taste so good, I can almost guarantee you won’t have leftovers.

Description

These refreshing Strawberry Pina Coladas are made with chunks of frozen pineapple, a can of coconut milk, a squeeze of lime juice and a splash of silver rum. They are the perfect cocktail for hot summer days and come together in a matter of minutes! 


Ingredients

Scale
  • 1 cup frozen pineapple
  • 1 (13.5 oz) can coconut milk 
  • 1 lime, juiced
  • 2 shots silver rum 
  • ¼ cup frozen strawberries 

Instructions

  1. In a blender combine pineapple, coconut milk, lime juice and rum. Blend until smooth and creamy before pouring half of the mixture into glasses to fill halfway. 
  2. Add strawberries to the remaining pina colada mixture and blend again, until smooth and creamy. Pour the remaining strawberry pina colada mixture into the glasses. 
  3. Garnish with pineapple slices, fresh strawberries or a slice of lime and enjoy!
