Today we’re making one of my favorite topical cocktails, the pineapple mojito! Made in 5 minutes with silver rum, fresh mint, pineapple and lime juice, it’s the ultimate refresher on a hot summer day.

If you love delicious & easy summer cocktails like this pineapple mojito, you should definitely try out a classic mojito or pina colada on the rocks.

Ingredients

Here’s everything you’ll need to make a pineapple mojito:

  • mint leaves
  • lime juice (freshly squeezed), plus 1 lime cut into slices
  • pineapple juice
  • silver rum
  • simple syrup
  • a splash of sparkling water to finish
  • ice
  • garnish: pineapple slices, additional mint, and lime slices

Instructions

Muddle. Add half of the mint with a few slices of lime and muddle in a glass. Add ice, lime juice, pineapple juice, rum, simple syrup and mix well with a spoon.

Hint: make sure to have all your ingredients prepped and ready to go before starting to make your mojito. This helps prevent the cocktail from getting watered down.

Serve. Top with sparkling water, a slice of pineapple or lime and fresh mint.

Pineapple mojitos for a crowd

Pineapple mojitos are super easy to make for a crowd.

Here are the measurements for making a pitcher:

  • 50 mint leaves
  • 1 cup lime juice (freshly squeezed), plus 1 lime cut into slices
  • 1 cup pineapple juice
  • 2 cups silver rum
  • 1 cup simple syrup
  • a bottle of sparkling water to finish
  • ice to serve
  • garnish: pineapple slices, additional mint, and lime slices

If making a pitcher, make sure to serve over ice instead of mixing the ice into the pitcher. This helps prevent the mojitos from getting watered down.

Variations

Here are some fun ways to mix it up with your mojitos:

  • Classic Mojito – keep it classic without any pineapple
  • Spicy – add jalapeno with the mint leaves and muddle; rim the glass with tajin
  • Pineapple infused syrup – add some fresh pineapple slices and/or juice to your simple syrup and simmer for 10 minutes before straining and cooling

Equipment

To make this cocktail you will need a muddler. If you don’t have one, feel free to use the handle of a wooden spoon or utensil

Top tip

I’m not usually a bubbly water snob, but picking a good quality brand of bubbly water really helps take this cocktail to the next level.

My personal favorite is topo chico, but any decent bubbly water will do!

  • 1 oz pineapple juice
  • 2 oz silver rum
  • 1 oz simple syrup
  • a splash of sparkling water to finish
  • ice
  • garnish: pineapple slices, additional mint, and lime slices

Instructions

  1. Muddle. Add half of the mint with a few slices of lime and muddle in a glass. Add ice, lime juice, pineapple juice, rum, simple syrup and mix well with a spoon.
  2. Serve. Top with sparkling water, a slice of pineapple or lime and fresh mint.

Notes

To make a quick simple syrup, mix together equal parts white granulated sugar and hot water. Mix to dissolve.
