Today we are making the Chi Chi Drink, a tropical cousin of the Piña Colada made with coconut milk, pineapple, and vodka. This blended fruity cocktail will have you fully embracing the warm summer months.

The Chi Chi drink is a wonderful cocktail for those who aren’t into rum, don’t have it readily available, or are just in the mood for something a little less traditional!

Inspired by the Puerto Rican Piña Colada cocktail (invented by Ramón “Monchito” Marrero), this vodka based cocktail originated from Donn Beach.

Chi Chi Drink vs. Piña Colada

The main difference between these two drinks is the type of alcohol used. While the Piña Colada is traditionally made with rum, the Chi Chi drink is made with vodka.

Aside from that, they both use coconut cream and pineapple juice or chunks.

Here’s all you need to make this cocktail:

  • Coconut milk
  • Vodka
  • Frozen pineapple chunks
  • Optional garnish: sliced pineapple, maraschino cherries

Instructions

Combine all ingredients except garnish in a blender and blend until smooth and creamy. Pour into a glass and top with garnish of choice.

Shaken not blended: Skip the blender, swap the frozen pineapple for some pineapple juice and shake it up with ice in a cobbler.

Garnish Options

Get creative with a fun garnish and take your cocktail to the next level. Here are my favorites for the Chi Chi drink:

  • Pineapple – keep it simple with a slice of fresh pineapple or dress things up with a dehydrated slice.
  • Lime – a dehydrated lime slice is fun, so is a little zest of lime or a fresh slice on top.
  • Cherry – stick to the Piña Colada roots and round things out with a Maraschino cherry on top.

Equipment

You will need a good quality blender to make this drink.

Alternatively, you could swap the frozen pineapple chunks for pineapple juice and make this using a cocktail shaker.
