Description

This Mediterranean style Mint Lemonade comes together with 4 simple ingredients: lemons, mint, simple syrup, and water. The fresh mint gets blended with a whole lemon rind then strained, giving this drink a smooth finish and vibrant bright green color.


Ingredients

  • 1 cup simple syrup (1/2 cup boiling water mixed with 1/2 cup white sugar)
  • 1 cup fresh squeezed lemon juice + 1 lemon rind
  • 2 cups mint
  • 3 cups cold water

Instructions

  1. Prep the simple syrup. Combine boiling water and sugar, mix until the sugar has dissolved and set aside to cool.
  2. Prep the lemons. Juice the lemons, saving one of the rinds. Remove any seeds and roughly chop one of the rinds. Add the juice and rind to a blender.
  3. Combine everything & blend. Add the mint, cold water, and simple syrup to the blender with the lemon. Blend until evenly combined.
  4. Strain* & serve. Strain the lemonade through a cheesecloth and/or mesh strainer. Serve over ice and enjoy!

Notes

* Feel free to skip the straining step if you’d like a chunkier lemonade.
