Ingredients
Units
Scale
- 12 large Medjool dates
- 4 oz goat cheese, softened to room temperature
- 1/4 cup pistachios, shelled and chopped roughly
- 1 tbsp hot honey or regular honey
- Optional: 1 tbsp fresh thyme, chives, or basil
Instructions
- Prep the dates. Using a small knife, slice into a date lengthwise just enough to remove the pit. Do so with all of the dates.
- Stuff the dates. Stuff the dates with goat cheese using a small spoon. Chop the pistachios and press the dates into them, cheese side down, to top them off.
- Drizzle with honey. Heat the honey in the microwave in 15 second intervals or in a saucepan until warm. Drizzle generously over the stuffed dates.
- Enjoy! See note for baking instructions if desired. Enjoy with a sprinkle of fresh thyme, chives, or basil.
Notes
Baking Instructions: If you want to melt the cheese and serve these warm, you can bake at 375 degrees F / 191 degrees C for 5-8 minutes.
Optional: If you don’t have hot honey and would like to add a bit of spice, sprinkle some red chili flakes into the goat cheese and mix before stuffing the dates.
