Description

These grilled shrimp skewers are the perfect recipe for your next BBQ and come together with 5 easy ingredients! Marinated with lemon juice, adobo seasoning, and finished with fresh parsley, they’re as packed with flavor as they are easy to make.


Ingredients

  • 2 tbsp olive oil
  • 2 tbsp lemon juice, plus additional lemon slices for serving
  • 3 tsp adobo seasoning (can also be store bought)
  • 1 lb large shrimp, peeled & deveined
  • fresh parsley, minced to garnish (optional)

Instructions

  1. Make the marinade. In a medium sized bowl, combine the olive oil, lemon juice, and adobo seasoning and mix well. 
  2. Marinate the shrimp. Add the shrimp to the bowl and toss to coat evenly with the marinade. Cover and refrigerate for 15 minutes to an hour. 
  3. Skewer the shrimp. Carefully skewer the marinated shrimp onto your skewers. The number of shrimp you skewer will depend on the size of the skewers, but usually 5-6 will fit on one. 
  4. Grill. Heat your grill to medium high heat before adding the skewers. Grill for 2-3 minutes on each side, or until the shrimp turns opaque in color.  
  5. Serve. Serve shrimp with a sprinkle of fresh parsley (0ptional) and a squeeze of fresh lemon juice. 

Notes

Important: If using wooden skewers, make sure to soak them in water for at least 1 hour before using on the grill to prevent them from burning.
