- 2 tbsp olive oil
- 2 tbsp lemon juice, plus additional lemon slices for serving
- 3 tsp adobo seasoning (can also be store bought)
- 1 lb large shrimp, peeled & deveined
- fresh parsley, minced to garnish (optional)
Instructions
- Make the marinade. In a medium sized bowl, combine the olive oil, lemon juice, and adobo seasoning and mix well.
- Marinate the shrimp. Add the shrimp to the bowl and toss to coat evenly with the marinade. Cover and refrigerate for 15 minutes to an hour.
- Skewer the shrimp. Carefully skewer the marinated shrimp onto your skewers. The number of shrimp you skewer will depend on the size of the skewers, but usually 5-6 will fit on one.
- Grill. Heat your grill to medium high heat before adding the skewers. Grill for 2-3 minutes on each side, or until the shrimp turns opaque in color.
- Serve. Serve shrimp with a sprinkle of fresh parsley (0ptional) and a squeeze of fresh lemon juice.
Notes
Important: If using wooden skewers, make sure to soak them in water for at least 1 hour before using on the grill to prevent them from burning.
