Ingredients

  • 4-5 yukon gold potatoes, cut into ½ square inch cubes

  • 1 red bell pepper, cut into the same sized pieces as the potatoes

  • 1 yellow onion, cut into the same sized pieces as the potatoes

  • ½ tbsp salt

  • ½ tbsp pepper

  • ½ tbsp garlic powder

  • 2 tsp smoked paprika

  • 1 tbsp olive oil

Instructions

  1. Preheat your air fryer to 390 degrees. Toss the potato cubes in a large bowl with seasonings and oil, making sure they are evenly coating.

  2. Arrange your potatoes in the air fryer in an even layer. Fry in batches to make sure they cook evenly.

  3. Fry for 10 minutes, tossing the basket after the first five minutes to make sure nothing is sticking.

  4. After 10 minutes, toss in the onions and peppers and fry another 5-10 minutes, checking halfway through again to make sure nothing is burning or sticking. Once potatoes are golden brown on the outside and soft on the inside take them out and enjoy!
