Crispy Plantain Salad

PUERTO RICAN STYLE

Prep the plantains & heat the oil. Heat the oil over medium high heat in a saucepan. Peel the plantains and chop into 1 inch rounds.

Fry the plantains. Fry the plantains in the oil until golden brown before transferring to a paper towel lined plate.

Smash & fry again. Smash the plantains between to two small plates to flatten before frying again until golden brown all around. Transfer to a fresh paper towel lined plate and season with salt.

Chop the tostones. Roughly chop the tostones into small bite sized pieces.

Combine the remaining ingredients. In a large bowl mix together yogurt, mayo, mustard, lime juice, shallot, cilantro, green onions, garlic, and sazon.

Mix well before adding the chopped tostones. Fold the tostones into the bowl until evenly combined.

Season to taste & enjoy. Add salt & pepper to taste, as well as some additional sazon, if desired. Serve with fresh cilantro & green onions. Enjoy!
