- 1 dozen chicken wings
- 1 cup of fish sauce
- 1/2 cup cornstarch
- 2 cups vegetable oil
- 6 cloves garlic (minced)
- 1/4 cup sugar
Instructions
- In a large bowl, mix fish sauce, sugar, and 3 cloves of garlic.
- Add chicken, cover and let marinate in the fridge for at least 1 hour (the longer you can wait the better). SAVE THE FISH SAUCE MARINADE.
- Dredge chicken in cornstarch and add to vegetable oil over medium high heat.
- Fry in batches about 15-20 minutes turning regularly.
- Remove and place on a paper towel.
- In a large sauce pan or wok add remaining fish sauce marinade and reduce to about half the amount of sauce.
- Add in fried wings and toss.
- Garnish with cilantro and thai basil.
