Ingredients

Scale
  • 4 cups arugula
  • ¼ cup olive oil
  • 2 cloves garlic, minced or grated 
  • 1 lemon, juiced
  • 1 tbsp dijon mustard
  • 2 tsp salt
  • 2 tsp freshly cracked pepper
  • ½ cup shaved parmesan 


Instructions

  1. In a small jar combine olive oil, garlic, lemon juice, mustard, salt and pepper. Mix well to make your dressing.
  2. In a large bowl, toss the arugula with the dressing. Top with shaved parmesan and enjoy!
