- 4 cups arugula
- ¼ cup olive oil
- 2 cloves garlic, minced or grated
- 1 lemon, juiced
- 1 tbsp dijon mustard
- 2 tsp salt
- 2 tsp freshly cracked pepper
- ½ cup shaved parmesan
Instructions
- In a small jar combine olive oil, garlic, lemon juice, mustard, salt and pepper. Mix well to make your dressing.
- In a large bowl, toss the arugula with the dressing. Top with shaved parmesan and enjoy!
