Description
These gluten free chocolate chip cookies are loaded with pistachios and finished with a sprinkle of flakey salt.
Ingredients

2 1/2 cups Bob’s Red Mill gluten-free all purpose flour
1 tsp salt + 1 tbsp flake salt for garnish
1 tsp baking soda
1 cup or 2 sticks of salted butter
1/2 cup white sugar
1 cup brown sugar
2 eggs
2 cups chocolate chips (soy free)
1 cup pistachios (optional)
Instructions
- Preheat your oven to 350.
- In a medium sized bowl mix the flour, baking soda and salt.
- In a larger bowl add softened butter and both sugars and mix for 2 minutes or until all clumps are broken down. Add eggs and mix well.
- Slowly mix in the flour mixture. Stir in the chocolate chips & pistachios.
- Drop tablespoon sized balls of cookie dough onto a parchment lined baking sheet. Sprinkle a pinch of finishing salt on top of each cookie.
- Bake for 8-10 minutes, sprinkle with flake salt and enjoy!
