Description
Today we are making date syrup, a 1 ingredient sauce that’s perfect for drizzling over pancakes, waffles, oatmeal, or just about anything sweet! It’s a lusciously thick, 100% plant based syrup with no added sugar, made from medjool dates stewed with water, strained, and reduced. This decadent syrup comes together in under 2 hours.

- 2 cups Medjool Dates, with pits removed
Instructions
- Remove the pits. Cut a small slice halfway through each date to remove the pits. Discard pits.
- Steep the dates. Add pitted dates to a bowl and cover with hot water. Let steep for an hour.
- Boil the dates. Transfer the dates, the water they steeped in, and an additional cup of water to a saucepan. Bring to a boil, then lower to a simmer. Continue to simmer over medium low for 40 minutes, or until the liquid begins to thicken. Mix and add a splash of hot water (about a half cup) at the halfway point.
- Strain. Strain the liquids from the solids using a mesh strainer or cheesecloth.
- Reduce. Transfer the liquid back into a saucepan and bring to a simmer. Continue to simmer, mixing regularly until it thickens, about 20 minutes. Cool and store.
