Description
This Coconut Mojito is a fun twist on the classic Cuban cocktail, made with coconut, fresh mint, lime juice, simple syrup and silver rum. It’s as beautiful to look at as it is tasty, and brings the flavor of a tropical island to your kitchen in just 5 minutes.
Ingredients

- 10 mint leaves
- 1 oz lime juice (freshly squeezed), plus 1 lime cut into slices
- 1 oz coconut cream, milk, or water (see note)
- 2 oz silver rum
- 1 oz simple syrup
- a splash of sparkling water to finish
- ice
Instructions
- Muddle. Add half of the mint with a few slices of lime and muddle in a glass. Add lime juice, coconut, rum, simple syrup, and mix well. Mix in ice.
- Serve. Top with sparkling water, a slice of lime and fresh mint.
Notes
Hint: if using coconut cream or milk, whisk or run through a mesh strainer to make sure it’s smooth, creamy, and clump free before using.
