Description
Camarones Guisados is a delicious one pot dish made with stewed and sautéed shrimp in a flavorful tomato based sauce. It comes together in under 30 minutes and makes a wonderful weeknight meal served over rice or with fried plantains.

- 2 tbsp olive oil
- 1 yellow onion, chopped
- 1 green bell pepper, chopped
- 5 cloves garlic, minced
- 1/2 cup pimento stuffed olives, chopped
- 1 (28oz) can tomato puree
- 1/2 cup water
- 1/4 cup cilantro, minced
- 2 bay leafs
- 1 tsp oregano
- 2 tsp salt
- 1 tsp pepper
- 2 lbs shrimp, peeled and deveined (fully thawed and dried with paper towels if frozen)
Instructions
- In a large pan heat the olive oil over medium heat. Toss in the onion and green bell pepper and sauté until the onions become translucent. Add in the garlic and sauté for another minute.
- Next add in the olives, tomato puree, water, spices and cilantro. Stir well, bring to a simmer and continue to cook for 5 minutes over medium heat. At this point taste the sauce to see if you want to add any additional salt or pepper.
- Add the shrimp to the pan, mix and cook for 10-15 minutes or until the shrimp is fully cooked through. You will know it’s fully cooked when the thickest part of the shrimp is opaque and not translucent.
