These Blistered Shishito Peppers with lemon & feta cheese are not only a delicious and easy summertime appetizer, they also provide a bit of entertainment!

- 2 cups shishito peppers
- 1 tbsp olive oil OR lemon garlic ghee
- juice of one lemon
- salt to taste
- 1/4 cup crumbled feta cheese
Instructions
- in a frying pan toast the shishitos and oil or ghee over medium-high heat until the peppers begin to blister on all around.
- Squeeze your lemon juice into the pan and cook for another minute or two, just until the lemon juice is reduced.
- Season with a pinch of salt and feta cheese. Enjoy!
