Puerto Rican Chicken Stew
start by browning the chicken in achiote (or olive) oil with sazon & adobo seasoning
add sofrito, bell pepper, carrot & celery
cook for a few minutes before adding broth, water, and bay leafs
bring to a boil before adding rice, covering and cooking for 15 minutes
stir in peas & pimento stuffed olives and garnish with a squeeze of lime juice & cilantro
