What makes a good quarantine entree?
Has anyone else lost count of how many times they’ve eaten pasta in the last week?
Being stuck at home with loads of existential dread has me reaching for carbs, cheese, and sweets.
It’s not like I’m complaining, but my jeans don’t fit anymore so it might be time to mix things up.
That’s why I made a collection of my top 5 quarantine entrees that have a good balance of healthy, non-perishable ingredients, and that element of comfort we all need right now.
Let’s jump right in:
Puerto Rican arroz con pollo
This dish truly has it all: lots of veggies, protein from the chicken, and hearty flavor infused rice. It gets bonus points for being dairy free (because my stomach will thank me for the cheese break).
