What makes a good quarantine dessert?
At this point in our new self-isolated reality, we’re really clinging onto any form of comfort food.
For me, that means consuming a healthy balance of cheese and sweets. Don’t worry, I’ve sprinkled some kale in there every now and then.
But honestly, who has the patience to bake a 3 tier cake in a time like this? Not me. Quarantine friendly desserts need to be easy to make, easy to source ingredients for, and delicious.
We are not worried about buttercream roses and edible glitter. We want butter and sugar and chocolate and we want it now.
So, without further ado, I present my favorite top 5 quarantine desserts:
Banana bread & muffins
By now, everyone and their mother has shared an Instagram story of the banana bread they made during quarantine. Cliché, but worth the hype.
So jump on the banana bread bandwagon! Both of these banana bread recipes make awesome contenders as top 5 quarantine desserts:
- gluten free banana bread with chocolate chips
- gluten free banana oat muffins with a chocolate drizzle
The infamous magic chocolate shell
Ok, I don’t have a *formal* recipe for this one quite yet (it’s coming soon!) In the meantime, this super simple 2 ingredient topping can be shared in one sentence:
Melt 1 tablespoon of coconut oil in the microwave with 1/2 cup of chocolate chips; mix well and pour over everything you love.
This stuff is pretty much guilt free and actually magical when it hardens. Pour it over ice cream, frozen fruit, or just about anything cold and watch the magic happen.
Sunflower seed butter cups
You may or may not have tried sunflower seed butter, but here at Salima’s Kitchen, it’s a favorite ingredient. It’s a great substitute for nut and peanut butter for people with peanut and nut allergies.
These chocolate cups can be made with any kind of nut or seed butter, so use what you have and love!
Chocolate covered nut butter bites
Easter has come and gone (with us all in quarantine). That said, these chocolate covered “eggs” make the perfect top 5 quarantine dessert for any occasion.
You can shape them using any cookie cutter, so they don’t have to be easter related at all. Use peanut butter, sunflower seed butter or any kind of nut butter you like to make your filling.
Lemon cake with fresh whipped cream & strawberries
If you’re not a chocolate lover and you’ve made it this far, I applaud you. Clearly I have a bit of a chocolate bias. Anyway, we saved the best for last today.
If you’re craving cake but not adventurous to do the whole 3 tier, piping frosting and buttercream flowers thing, this is the cake for you.
It’s everything you want in a dessert without any of the fuss.
