Vegan Chocolate Chip Cookie Dough Bites

These 3 ingredient vegan chocolate chip cookie dough bites will satisfy all of your sweet tooth cravings with no regret necessary. Only cashews, salt and chocolate! The cashew butter in this recipe is really important so make sure you either make your own (with this recipe) or invest in some that uses only cashews and salt. No other ingredients are necessary. While some might argue that these don’t taste exactly like chocolate chip cookies, all of my taste testers have been convinced! Not only are these vegan, they are also gluten and soy free. So you really can have your cake (or vegan chocolate chip cookie dough bites) and eat them too! Even if you aren’t gluten, soy or dairy free you will still be able to appreciate the satisfaction that is eating cookie dough bites that aren’t half bad for you.

Vegan Chocolate Chip Cookie Dough Bites

Tools You Will Probably Need:

  • A food processor or high powered blender. You will need this if you plan on making the cashew butter yourself (which I highly recommend!)
  • Parchment paper. This is absolutely essential in allowing the chocolate shell to harden without sticking to whatever surface you set it on
  • Mini chocolate chips. Usually I like to write in substitutions you can make for most ingredients. This one is pretty essential because you really wouldn’t be able to make bite sized balls with normal sized chips
  • A mini crockpot or double boiler. The smaller the pot you use the melt the chocolate, the easier it will be to get the cookie dough bites coated

Before You Start:

If you plan on making the cashew butter from scratch or using store bought, know that it needs to be chilled for at least 2 hours before being used. Chilling the butter allows it to firm up and makes forming the cookie dough bites much easier!

Vegan Chocolate Chip Cookie Dough Bites
Instructions
  1. In a bowl, add chilled 2 cups cashew butter and mini chocolate chips and mix to form a dough like consistency.
  2. Using your hands, shape the dough mixture into bite sized balls.
  3. Once all of the dough mixture is shaped into balls, place the balls into the freezer to chill for at least 30 minutes.
  4. While the bites are chilling, melt the melting chocolate in a double boiler.
  5. Once the chocolate is completely melted, remove it from the heat.
  6. After 30 minutes have gone by, grab the bites from the freezer and roll them in the chocolate, making sure they are coated completely.
  7. Place the chocolate covered bites on a parchment lined baking sheet or plate.
  8. Allow chocolate to harden completely (either in the fridge or freezer) before eating!
  9. Keep refrigerated.
Recipe Notes

Make sure the cashew butter has been chilling in the fridge for at least 2 hours before rolling into bite sized balls.

  1. Oh my. Since I was a kid, I loved cookie dough. (Though I don’t have the fondest of memories of the kind they served at the cafeteria where we both went to college…) But in the back of my head, I was always thinking, “aren’t you consuming raw eggs?” But now, problem solved!
