Weekly Meal Prep #5
If you like tacos you will love these Spicy Taco Salad Bowls with creamy greek yogurt dressing. This meal prep recipe is as delicious as it is easy to make! Check out the rest of my Weekly Meal Prep series here.
Spicy Taco Salad Bowls
When you google “Meal Prep”, taco salad recipes are pretty easy to find, but these Spicy Taco Salad Bowls are sure to stand out in comparison. My secret ingredients (jalapeños and onions) are actually not so secret at all but I rarely see them in other recipes! The onions are caramelized with the ground beef to add a sweet and spicy element that compliments the spices nicely. I don’t think I need an explanation for adding jalapeños to a Spicy Taco Salad Bowls recipe. Bonus points if you have pickled jalapeños and/or onions.
Greek Yogurt Dressing = The World’s Easiest Dressing
When I call this the world’s easiest dressing I am not kidding; shake up 1/2 cup of your favorite salsa and 1 cup greek yogurt in a container and you’re done. I’ve been really loving yogurt based dressings because of how easy and seriously delicious they are. The yogurt adds a creamy texture you might expect from mayo or mustard but it has the added benefits of probiotics! I used my favorite salsa from Trader Joe’s but you should use your favorite; everyone’s got one.
Meal Prep Essentials:
This wouldn’t be a complete Salima’s Kitchen Meal Prep recipe without sharing my favorite kitchen tools used for this recipe so here goes:
- If you follow my Instagram page or my Weekly Meal Prep series, you know I’m a big fan of the divided containers. I was recently gifted a set of plastic, dishwasher/microwave safe divided containers and am giving them a try this week, will report back on those later. In the meantime, here is a link to my favorite glass meal prep containers.
- That’s all for today; this recipe really is so simple, you don’t need any fancy tools other than a cutting board, knife and a frying pan. Hope you give it a try and enjoy!
