What is Rice Pilaf?
Wondering what the heck pilaf is? This delicious dish originated in India and is basically rice cooked with broth, herbs, spices and whatever else you decide to add to it.
Once I discovered this, I realized I have unknowingly been making variations of rice pilaf for years now! If you’ve ever cooked rice with chicken broth, onions and or garlic, you’ve made a type of pilaf.
I’m taking this my favorite Basmati brown rice and using Moroccan spices and herbs to give it a Moroccan flare. It pairs perfectly as a gluten free substitute for bread in any Moroccan tagine.
Recently, I’ve been trying to highlight seasonal produce each month in my blog posts. It’s important to me that I support local businesses and local agriculture; plus, I know when I buy seasonal produce, it has less of a distance it has to travel to get to my kitchen!
Collard greens are a wonderful winter green that go well in soups, stir fry, and rice pilafs. In the mornings, I like to sauté them with olive oil and eat them with my eggs and potatoes.
There are a number of other leafy greens you may have in your fridge that would work well as a substitute here (kale, chard, mustard greens, etc.). Get creative and have fun with this dish!

Brown Rice Pilaf with Collard Greens
- Prep Time: 10 minutes
- Cook Time: 45 minutes

- 1 tbsp olive oil
- 1 yellow onion
- 4 collard green leaves
- 3 cloves garlic
- 2 cups brown rice
- 2 tsp turmeric
- 3 saffron strands
- 1 tsp cumin
- 1 tsp paprika
- 2 tsp salt
- 1 tsp pepper
- 2 cups water
- In a saucepan heat olive oil over medium heat and combine diced onion and ribbons of collard greens. Sauté for 3-4 minutes and toss in minced garlic. Sauté for another minute.
- Add in spices and rinsed rice. Toast rice with spices over medium high heat for 1-2 minutes.
- Pour in 2 cups water and bring to a boil. Cover and simmer for 45 minutes. Fluff and serve with beans, veggies, meat or fish.
