Gluten Free Pancake Mix


For the Pancake Mix:

  1. In a large mason jar combine all the mix ingredients and mix well. 
  2. When ready to make pancakes, combine eggs, milk, melted butter and the pancake mix. Combine until smooth and most of the lumps are gone. 
  3. Melt some butter in a skillet over medium heat and scoop 1/4 cup of pancake batter into the frying pan to form small pancakes (you may need to encourage the shape with a spoon).
  4. Fry for 3-4 minutes or until small bubbles start to surface. Flip and fry for another 2-3 minutes. Serve with berries, maple syrup and additional butter! Whipped cream optional but highly recommended.
