If you've ever tried the classic Italian Caprese salad, you know there are a few staple ingredients that cannot be substituted.

Those three simple ingredients are enough to make some serious magic. And when combined with a bit of balsamic vinegar and olive oil, there's pretty much no way to mess this Caprese chicken up.
Before starting your Caprese chicken, make sure you have an oven safe pan!
Getting the fresh mozzarella all melty and delicious won't happen on the stove top, so we're throwing it under the blender to get that bubbly, cheesy deliciousness we all know and love.
I'm using this enamel coated pan but you can use any cast iron or oven safe one you can find.
There's something about fresh basil and tomatoes that just screams SUMMER.
Maybe it's just me, but I would take a bouquet of fresh basil over one of fresh flowers any day!
And in the summer months, when tomatoes are ripening on the vine, this dish is the most fabulous way to celebrate.
If you find yourself making this during the colder months, you can get by with sun dried tomatoes, but the fresh basil is a non negotiable.

Not going to lie, I love this dish on it's own. No sides necessary.
