Preheat your air fryer to 250 degrees. Peel and thinly slice your potatoes. Soak in cold water for 30 minutes then dry thoroughly with paper towels. Toss in a bowl with oil and salt.
Place potato slices in one layer in your air fryer. This step will depend on the size and build of your appliance. Mine is quite small so I had to cook the potato in several batches. Fry for 10 minutes.
Check and flip potato chips, removing any that are completely crisp and browning on the edges. From here, continue to fry at 250 in 3-5 minute increments, checking, flipping, and removing chips as needed.
Sprinkle with salt. Enjoy with homemade guacamole!
