Greek Panzanella Salad

This Greek Panzanella Salad is loaded with creamy feta cheese and kalamata olives, juicy fresh tomatoes, and crunchy cucumbers and gluten free croutons.



  • 1 head butter lettuce (washed and dried)
  • 2 tsp fresh dill (minced)
  • 1/4 cup feta cheese (crumbled)
  • 1 cup cherry tomatoes
  • a small handful of kalamata olives
  • 1 cup gluten free croutons
  • dressing of your choice (I used this balsamic vinaigrette)


  1. In a large salad bowl toss the butter lettuce, dill, feta, tomatoes, olives, and dressing. Top with croutons and fresh springs of dill. Enjoy!
