Fully aware of how early it is, I’m jumping the gun and diving into allll the fresh summer produce in (almost) May!
When I think of summer produce, I think of juicy, ripe tomatoes, fresh off the bush herbs, and lots of bright colors. This super simple summer salad takes all of my favorite components of a Greek salad (kalamata olives, feta cheese, tomatoes, dill, and cucumbers) and takes it to the next level.
And what better ingredient to take a salad to the next level than gluten free olive oil croutons?! All of these beautiful Spring/Summertime fruits (hello tomatoes) and veggies, tossed with toasted bread to make this epic Greek Panzanella Salad.
If you’ve never heard of Panzanella salad before, get ready to fall in love with salad on a much more real and trusting level. This is the salad of all salads; versatile, approachable, full of carbs, what more could you want?
Torn pieces of bread, toasted lightly with olive oil, then tossed in with virtually any kind of salad ingredients you love most, I’ve never met a person who wasn’t woo’ed by this one.
Another crowd pleaser variation on this Greek Panzanella Salad is a Panzanella with stone fruit (peaches and nectarines) and burrata cheese… more on that later. Enough talking, let’s get started!
