This gluten free Thanksgiving series wouldn’t be complete without a gluten free stuffing recipe loaded with bacon and seasonal mushrooms.  I’m using one of my favorite gluten free breads (you can find it here) to make this gluten free stuffing. Last year when I found out about my wheat/gluten allergy, it was around this time, and Thanksgiving weighed heavy on my mind. So many of my favorite dishes contained wheat and I was usually the one cooking most of them. How could I possibly make this work, without any experience cooking gluten free? A year later, hindsight is 20/20 and I know that for this particular recipe (and many others) it’s as simple as switching out one ingredient for a gluten free alternative. In this recipe that alternative is your favorite kind of bread. Those stuffing kits you buy at the store? All they are is dried out bread with packets of seasoning. Don’t waste your time on those because we are making this gluten free stuffing in under an hour and turning the flavor all the way up with real ingredients like bacon, celery, onion and seasonal mushrooms. Gluten Free Stuffing with Bacon & Seasonal Mushrooms

This gluten free Thanksgiving series wouldn’t be complete without a gluten free stuffing recipe loaded with bacon and seasonal mushrooms.


-1 loaf bread, I used gluten free

-1 tbsp olive oil

-5 strips bacon, cut into bite sized pieces

-5 stocks celery, diced

-1 onion, diced

-4 cloves garlic, minced

– 4 tsp salt

-3 tsp pepper

-1 cup chicken stock


  1. Preheat your oven to 250 degrees F. Cut your bread into bite sized pieces, toss with olive oil and spread out on a parchment lined baking sheet. Bake for 50 minutes.
  2. In a large saucepan, fry the bacon until the pieces are fully cooked, setting bacon aside and reserving 2 tbsp of the grease in the pan. Add celery, onion and garlic and sauté for 8-10 minutes.
  3. Adjust oven temp to 350. In a large mixing bowl, combine bread pieces, bacon, celery mixture, salt, pepper and chicken stock. Pour into a greased 9X13 baking dish and bake for 30-35 minutes.
