Italian kale soup, to be specific. This white bean kale soup with Italian chicken sausage has all the richness and creaminess a hearty winter soup needs from ingredients like torn Italian kale and white beans.

You could use whatever kind of kale you like, but this dark green, fibrous variety is my favorite for soups. I’ve heard it being called many different names, but here’s what it looks like: italian kale

White Bean Kale Soup with Italian Chicken Sausage and Shaved Parmesan

This white bean kale soup with Italian chicken sausage has all the richness and creaminess a hearty winter soup needs from ingredients like torn Italian kale, shaved parmesan and white beans.


Ingredients

-1 tbsp butter

-3/4 lb italian chicken sausage

-1 yellow onion

-2 cloves garlic

-2 tsp oregano

-1 tsp red pepper flakes

-3 tsp salt

-2 tsp black pepper

-2 tbsp gluten free flour

-4 cups chicken stock

-4 cups water

-2 cans white beans (drained and rinsed)

-1 bunch italian kale

-1/4 cup shaved parmesan to garnish


Instructions

  1. in a large heavy bottomed pot, add diced onion and olive oil. sauté for 5 minutes and add in minced garlic, oregano, red pepper flakes, salt, pepper and chicken sausage. cook until chicken sausage begins to brown, breaking the sausage up into smaller pieces.
  2. add gluten free flour and mix to coat the contents of the pot. deglaze the pan with 1 cup of chicken stock, mixing to combine. add in remaining chicken stock and water and bring to a boil.
  3. cover and lower to medium low heat for 30 minutes. add in beans and kale and cook for another 5 minutes. enjoy with freshly shaved parmesan!
