Seared Scallops in Lemon Garlic Ghee

These seared scallops are full of flavor from lemon garlic ghee and served on a bed of refreshing purple cabbage slaw.

This dish is definitely gourmet thanks to wild jumbo scallops, but it’s easy to make any day of the week as it only takes 15 minutes to throw together!

Searing the scallops is a no brainer for me, I’m not sure there’s any other way to make them this perfect. However, searing them in lemon garlic ghee is a total game changer. I got this ghee from none other than Ahara Rasa (one of my favorite local Portland businesses).

Seared Scallops with Purple Cabbage SlawThe lemon garlic flavor gets infused into the scallops and forms a wonderful crust without any burnt bits you might get if you were using fresh garlic. If you don’t have lemon garlic ghee, using butter would be just as delicious!

Refreshing Purple Cabbage Slaw

This purple cabbage slaw is definitely one of my favorite salads. It’s light, refreshing and the lemon parsley dressing is truly mouth watering. I mean, how can you go wrong with these ingredients:

  • cabbage
  • carrots
  • parsley
  • lemon juice
  • olive oil
  • salt & pepper

This recipe is just full of no brainers. Make this 15 minute meal for your friends and family on a Monday night and blow their minds with your ability to make a fancy a$$ meal on a weeknight.

Seared Scallops with Purple Cabbage Slaw

These seared scallops are full of flavor from lemon garlic ghee and served on a bed of refreshing purple cabbage slaw.



For the Purple Slaw:

  • 2 cups shredded purple cabbage
  • 2 cups shredded carrots
  • 3 tbsp lemon juice
  • 4 tbsp olive oil
  • 2 tbsp chopped parsley
  • 1 clove minced garlic
  • a pinch of salt & pepper

For the Scallops:

  • 1 tbsp Ahara Rasa lemon garlic ghee or butter
  • 1218 scallops
  • a pinch of salt & pepper
  • 1 tbsp lemon juice


  1. Add purple cabbage & grated carrots to a large bowl and mix well.
  2. In a smaller bowl combine lemon juice, olive oil, minced garlic, salt, pepper and parsley. Mix well and toss with the cabbage and carrots to combine.
  3.  In a nonstick pan, heat lemon garlic ghee. Season the scallops on both sides with salt and pepper then add to the pan. Sear for 2 minutes on each side, adding a squeeze of lemon juice in the last minute.
  4. Place a 3-4 scallops on top of a few spoonfuls of slaw and serve!
