The Trendiest of All Toasts: Avocado Toast

I know, I know, it’s 2018 and avocado toast is old news. But I’m still eating it on a regular basis, call me basic. This trendy toast is vegan, easily adaptable and makes for an affordably healthy meal. SO here I am, writing ANOTHER blog on avocado toast. This time it’s topped with some of my favorite seasonal veggies: watermelon radish and micro-greens.

Watermelon Radish

This colorful watermelon radish has been an inspiration for many new recipes this summer, because it’s just so darn pretty! I mean, have you ever seen such a beautiful vegetable?

Avocado Toast with Watermelon Radish and Micro-greens

If you like radishes, or summer veggies that are crisp and a bit spicy, you will love watermelon radish. It’s crunchy and full of flavor and spreads beauty wherever it goes.


Micro-greens are another super simple way to make your food look pretty. They are just as healthy as other leafy greens, with softer notes of bitterness. You can toss them in with salads, sprinkle them over appetizers or top toast with them as we will in this recipe.

Micro-greens are basically just baby versions of their larger green relatives, so feel free to use any kind you can find. Usually they live in the produce section of grocery stores but can occasionally be found near olive bars, cheeses and mushrooms.

4 slices gluten free toast

2 avocados

1 tsp salt

2 tsp pepper

1 watermelon radish, sliced thinly

1/4 cup micro-greens


1. In a small bowl mash the avocados, salt and pepper with a fork.

2. Spread over toast and top with micro-greens and radish.

3. Enjoy!
