Gluten-Free Chocolate Chip Cookies
These gluten-free chocolate chip cookies are loaded with pistachios and finished with a sprinkle of thick rock salt. They are so addicting, I had to make two batches this weekend to feed my (not gluten-free) friends! So whether or not you’re allergic to wheat or gluten, you will definitely enjoy these cookies.
What’s With Pistachios & Rock Salt?
Back in elementary school when I went to Morocco to visit my grandma I always looked forward to getting a pistachio ice cream from the shop near her apartment. Something about the bright green color and the sweet, nutty taste made it my favorite flavor. So adding them to a batch of chocolate chip cookies seemed like a no brainer. Typically, I’m not a huge fan of nuts in my cookies, but pistachios are no ordinary nut. Don’t knock it till you try it.
That said, if you are allergic to tree nuts, leaving the nuts out from this recipe will result in an equally delicious batch of gluten-free chocolate chip cookies. As for the rock salt… this is something I believe everyone can enjoy. Who doesn’t love a little salty with their sweet?
Ahara’s Vanilla Dream Ghee
One of the other secret ingredients in these (not so) classic cookies is the substitute made for butter or oil. Using ghee, also known as clarified butter, gives the cookies that chewy, soft texture we all know and love. Ahara’s Vanilla Dream Ghee gets major bonus points for having organic vanilla bean slow roasted into it; it acts as two ingredients in one!
If you don’t have vanilla ghee, normal ghee, butter or vegetable oil will work also. Just substitute 1 for 1 !

These gluten-free chocolate chip cookies are loaded with pistachios and finished with a sprinkle of thick rock salt.
2 1/2 cups Bob’s Red Mill gluten-free all purpose flour
1 tsp salt + 1 tbsp finishing salt for garnish
1 tsp baking soda
1 cup of Ahara Rasa vanilla ghee OR 2 sticks of butter
1/2 cup white sugar
1 cup brown sugar
2 cups chocolate chips (soy free)
1 cup pistachios (optional)
- Preheat your oven to 375.
- In a medium sized bowl mix the flour, baking soda and salt.
- In a larger bowl add ghee and both sugars and mix for 2 minutes or until all clumps are broken down. Add eggs and mix well.
- Slowly mix in the flour mixture. Stir in the chocolate chips & pistachios.
- Drop tablespoon sized balls of cookie dough onto a parchment lined baking sheet. Sprinkle a pinch of finishing salt on top of each cookie.
- Bake for 8-10 minutes and enjoy!
