Chocolate Chips & Toasted Oats

If you’ve ever enjoyed a oatmeal chocolate chip cookie, you know how dynamite this combination. There is something about chocolate chips and toasted oats that makes me want to curl up in a blanket by a fire (despite it being 97 degrees outside today). These two classic ingredients are such a perfect match, I am more than willing to turn my oven on mid-July. Luckily, your oven is only required for a quick 10 minutes to toast the oats and nuts. The rest of the work is done in the refrigerator while the granola bars set.

Cashews, Or Whatever Nut You Fancy

If you’ve visited my blog before, you may have noticed I talk a lot about easy substitutions for ingredients in my recipes. This comes as second nature to me because of all the different allergies I have to work around! These granola bars are a new favorite recipe for me because of how versatile they are. Allergic to nuts? Use hemp seeds! Hate cashews? Try almonds. If you don’t want to use chocolate and want to make them a bit healthier, you can swap the chips out for dried cranberries or raisins. Have fun with these and try making them with kids; it’s a blast!

Granola Bars with Chocolate Chips, Toasted Oats & Cashews

Description

Loaded with chocolate chips, toasted oats, cashews and honey, these granola bars make the perfect breakfast with a balance of sweet and healthy.


Ingredients

3 cups oats

1 cup cashews (or any of your favorite nuts)

1/2 cup honey

3/4 cup butter, salted

1/4 cup brown sugar

3/4 cup chocolate chips ( I use soy free chips,)

Optional add ins: 1/4 cup raisins, dried cranberries or seeds


Instructions

  1. Preheat oven to 350. On a parchment lined sheet tray, toast the oats and nuts from 7-10 minutes or until the oats become golden brown. Set aside.
  2. In a saucepan, melt butter, honey, and brown sugar.
  3. In a large bowl, combine the butter honey mixture, oats and nuts. Mix well to combine. Add in chocolate chips, raisins and or seeds. Mix well. The chocolate may melt and that’s ok!
  4. Press into a baking dish lined with parchment paper or plastic wrap. Top with additional chocolate chips and chill for 2 hours.
  5. Cut into bars and enjoy!

Notes

These will keep on the countertop in airtight bags for 1 week or in the fridge for 2 weeks.
