An Entertaining Appetizer

A friend who introduced these to me told me 1 in 10 are hot so it’s almost like a lower stakes Russian roulette game. If you’re not crazy about spicy food, the remaining 9 peppers are mild but always packed with smoky savory flavor.

Let’s Talk Ghee

“What the heck is ghee?” you may be asking yourself. Ghee is clarified butter used as a staple in Indian and Moroccan cuisine. The butter used to make it is slowly cooked until all of the milk solids float to the top and are strained out.

A lot of people who have sensitivities/intolerances for dairy actually do just fine with ghee. This combined with the fact that it tastes equally, if not better than butter makes it easy to see why it’s become so popular in the U.S. in the last few years.

The Lemon Garlic Ghee I’m using in this recipe is absolutely perfect for dishes you would pair with lemon and butter, like these Shishito Peppers. If you can’t get your hands on a jar of ghee, this dish is equally delicious with a drizzle of olive oil and finished with a squeeze of fresh lemon juice! 

A Perfect Summertime Snack

In all honesty, I eat these blistered shishito peppers in the summertime for breakfast, lunch and dinner. They make me feel healthy in that I have an abundance of green on my plate, but they also have that savory delicious pepper flavor profile that I find addicting. 

When they’re in season, they go well with eggs for breakfast, as a simple side dish or as an appetizer as shown in this recipe. Once you learn how to cook them, the possibilities are endless!

Don’t have any feta, ghee or lemon? You can’t go wrong with shishitos + oil + salt + pepper.

Scale

Ingredients

  • 2 cups shishito peppers
  • 1 tbsp olive oil OR lemon garlic ghee 
  • juice of one lemon
  • salt to taste
  • 1/4 cup crumbled feta cheese 

Instructions

  1. in a frying pan toast the shishitos and oil or ghee over medium-high heat until the peppers begin to blister on all around.
  2. Squeeze your lemon juice into the pan and cook for another minute or two, just until the lemon juice is reduced.
  3. Season with a pinch of salt and feta cheese. Enjoy!
