Gluten Free Mac and Cheese

Finally a gluten free twist on the classic dish that doesn’t disappoint! Whether you are or aren’t sensitive to gluten, this gluten free mac and cheese will have you coming back for seconds.

Why Gluten Free Mac and Cheese?

About a month ago I found out that I am extremely allergic to most of my favorite things, including wheat. Tragic, I know. This was especially disappointing news to me considering gluten and wheat in general were staples in my diet (pasta, pizza, cookies, etc.). So I decided to try and do the mature thing and not eat wheat anymore. It has been a hard month. If the pizza place across the street didn’t make a decent GF pizza I might not have made it.

Because… cravings

Creamy, homemade mac & cheese was the food I missed the most. I tried all kinds of fancy (and way too pricey) gluten free pastas from Trader Joes and Whole Foods and was totally disappointed by the texture. I eventually got desperate and turned to the internet for some assistance. As always, Amazon answered my prayers. Turns out one of my favorite pasta brands, Barilla, makes it’s own GF version that is actually pretty kick ass. 10/10. Would eat again.

So, if you’re going to bother making gluten free mac and cheese, go find yourself some Barilla. This is totally not sponsored I was just so delighted with the texture, taste and price of this pasta that I have to share the love. Now someone go find the equivalent to this in pizza crust please.

This recipe is basically my classic take on mac & cheese with the swap for the amazing pasta mentioned above and a twist of feta cheese that adds a delicious tang. Cooking the pasta in the milk at a low heat adds a creamy texture that will leave all types of tummies satisfied. Try it out and let me know what you think!

Gluten Free Mac and Cheese

  • Servings: 2-4

This gluten free mac and cheese is creamy in all the right ways.


-1 package gluten free pasta

-1/3 cup feta cheese

-1/3 cup mozzarella

-1 tbsp butter

-1/3 cup sharp cheddar

-3 cups milk

-2 tbsp salt

-2 tbsp pepper


In a medium sized sauce pan bring milk to a simmer.

Add pasta and reduce heat to medium low.

Stir until milk reduces and pasta is cooked through (watching to make sure milk doesn’t boil over because trust me, it will try!)

Add butter, salt, pepper and cheese.

Stir until cheese is melted.
