Apple Pork Chop Salad

Some pairings in life make no sense and yet work together so well. Apples & peanut butter. Sharp cheddar cheese & apples. Apple pie… really anything with apples. ‘Tis the season, right? This Apple pork chop salad has that sweet and savory flavor we all crave. The sour crunch of a crisp granny smith is the perfect pairing with a bite of juicy pepper crusted pork.

Not sold quite yet? Top it with a honey mustard dressing that soaks into the crunchy croutons and coats the butter lettuce evenly. I used gluten free croutons but you could use any kind of bread and toast up your own croutons in a frying pan with a little salt + pepper + olive oil. Try this recipe and let me know what you think.
