Vegan Blueberry Muffins

Vegan blueberry muffins never tasted so good! Shout out to the secret ingredient of my life: apple cider vinegar 🔥

Ingredients:

2 cups flour

1 tablespoon baking soda

1 teaspoon lemon zest

1 teaspoon salt

¼ cup maple syrup

½ cup white sugar

⅓ cup vegetable oil

1 cup almond milk

1 tablespoon apple cider vinegar

1 cup fresh blueberries

Directions:

Preheat oven to 375. In a medium sized bowl combine flour, baking soda, salt and lemon zest. Mix well. In a large bowl combine maple syrup, sugar, apple cider vinegar, oil and almond milk. Mix until smooth. Add the dry ingredients and mix to combine. Fold in blueberries. Pour into greased muffin tin and bake for 20 minutes.
