Spicy Ahi Tuna Poke Bowl

I just finished uploading my recipe for these spicy ahi tuna poke bowls to Instagram – go check them out before they disappear! Such a perfect summer meal because you don’t have to use the stove or oven at all! The acidity from the lemon juice used in the poke actually cooks the tuna for you so your house stays nice and cool. Ingredients:
– For the Poke –
3/4 lb ahi tuna (sushi grade)
2 tbsp liquid aminos or soy sauce
1 tbsp Sriracha
1 tsp sesame oil
1/2 jalapeno, minced finely
juice of 1 lemon

– For the Bowl –
1 cup cooked white rice
2 carrots sliced thinly
2 cucumbers sliced thinly
nori strips
sesame seeds
edamame

Directions:
In a medium bowl combine liquid aminos, Sriracha, jalapeno, sesame oil, and lemon juice. Mix well. Cut the ahi tuna into medium sized cubes and add to marinade. Mix well and refrigerate for at least an hour.

While the poke is marinating, cook your rice. Dice your toppings.
