Spicy Ahi Tuna Poke Bowl

I just finished uploading my recipe for these spicy ahi tuna poke bowls to Instagram story – go check it out before it disappears! This is such a perfect summer meal because you don’t have to use the oven at all! The acidity from the lemon juice used in the poke actually cooks the tuna for you so your house stays nice and cool. Try this recipe out and let me know what you think!

For the Poke

-3/4 lb ahi tuna (sushi grade)

-1 tsp sesame oil

-1/2 jalapeno, minced finely

-juice of 1 lemon

For the Bowl

-1 cup cooked white rice

-2 carrots sliced thinly

-2 cucumbers sliced thinly

-nori strips

-sesame seeds

In a medium bowl combine liquid aminos, Sriracha, jalapeno, sesame oil, and lemon juice. Mix well. Cut the ahi tuna into medium sized cubes and add to marinade. Mix well and refrigerate for at least an hour.

While the poke is marinating, cook your rice. Dice your toppings.

Assemble and enjoy!
