Spinach Strawberry Salad with almonds & a balsamic vinaigrette

One of my favorite summer salads. You can also mix in some feta cheese to give it a savory bite!

Spinach Salad with Strawberries Almonds & Balsamic Vinaigrette


(for the salad)

4 cups fresh spinach

3 cups strawberries

1/2 cup almond slivers (whole almonds work too)

(for the dressing)

1 tablespoon dijon mustard

3 tablespoons olive oil

2 tablespoons balsamic vinegar

salt & pepper to taste


Dice strawberries into halves or quarters and add to a large bowl with spinach and almonds. Top with feta cheese if desired.

In a small bowl add dijon mustard, balsamic vinegar, salt and pepper. Mix until combined. Slowly whisk in olive oil and continue to whisk until dressing is creamy.

Drizzle desired amount of dressing over salad. Toss and enjoy!
