I recently started a new job that requires me to wake up at 5am – which has made cooking a healthy breakfast quite the struggle. That’s why meal prepping has been (and continues to be) a life saver. This recipe helps you in making a week’s worth of breakfasts, leaving minimal work to do in the morning when you feel like a complete zombie (pre coffee).
Note that this recipe makes enough for 4-5 breakfasts during the week.
4 chicken sausages
4 cups of kale
3 tablespoons olive oil
3 cloves garlic
1 sweet potato
eggs (this depends on how many you use each morning, I do 3)
salt & pepper to taste
In a large frying pan add olive oil, diced sweet potato and onion and stir over medium high heat. Sauté until sweet potatoes begin to crisp up. Add diced garlic and sliced sausage. Continue to stir fry until potatoes are cooked all the way through (about 15 minutes).
Once potatoes are cooked, mix in kale. At this point you can store this mixture in tupperware and save for the morning!
In the morning, whisk together 3 eggs in a small bowl.
In a medium frying pan warm up sausage kale mix over medium heat with a tablespoon of olive oil.
Add in eggs, turn heat down to low, and scramble! This way your hearty breakfast only takes about five minutes to cook and keeps you full through the morning.
